Lean Chef Recipes
My goals in creating Lean Chef recipes are to:
- Provide
recipes for balanced meals in which fat contributes less than 30% of
Calories
- Facilitate
weight maintenance with balanced 400-Calorie meals
- Encourage
vascular health by minimizing sodium, cholesterol and saturated fat
- Offer
recipes that call for a wide variety of foods that help you eat more
vegetables and whole grains.
I analyze vitamin and mineral content of every main course,
and craft side dishes which provide missing nutrients.
Each suggested meal, along with a glass of nonfat milk, provides at least 30%
of 19 essential vitamins and minerals.
